Creamy Fresh Tomato sauce

An easy and fast supper that uses ingredients you probably have in your cupboard. I served it over lemon pepper papparadelle from Trader Joe’s, if you use a plain pasta I’d recommend adding a little lemon zest to the garlic mixture.

3T Olive oil
4 Cloves of garlic, minced
1/2 Bell pepper, diced
1/4 tsp Crushed red pepper flakes
1/4 tsp Thyme leaves
3 Medium sized tomatoes, diced
3 T Heavy cream

Saute garlic, red pepper flakes and thyme in the oil until fragrant. Add the peppers and tomatoes and cook over medium heat until the tomatoes have released their juices and they are beginning to thicken, about 10 minutes. Add the cream and simmer until the sauce has thickened. Season with salt and pepper.

Serves 2
